Baked Cod & Chickpeas


This recipe was one I threw together last Tuesday when I just wanted something quick, warm and healthy! I had gotten absolutely drenched walking home after a very long day of work and I was so tempted to just pick up the phone and call a takeaway. Instead I threw this together and the result was so delicious I will be absolutely be making this again. 

Serves: 4
Propoints per Serving: 6 propoints
Ingredients:
4 Cod fillets - roughly 120g each
1 can chickpeas
1 tin chopped tomatoes
1tbsp tomato purree
1 red pepper
1 onion
4 cloves garlic crushed
handful of button mushrooms
2 tsp hot paprika
2 tsp sweet paprika
1 tsp cayenne
1/2 tsp sugar
salt and pepper
2 tsp olive oil

Preheat the oven to 180C.

Chop the onions and pepper and slice the mushrooms. Heat the oil over a medium head and fry the onions until soft. Add the peppers and garlic, turn down the heat, cover and cook until the peppers are soft stirring occasionally. Add the mushrooms and cook for a further 2-3 minutes.

Christmas Challenge - The End is Here!!



We made it! I don't know about you but December has really just disappeared into a total blur! I have had a really stressful final week and I have had a good few slip ups, but for the most part I managed to stay on plan. I was down 1.5lbs in my final week bringing my total loss for this challenge to 11lbs. I didn't make the full stone but I'm pretty happy with how I've done.

Christmas Challenge: Penultimate Weigh In



We're into the final stretch now! Just over a week to go until Santa arrives and only one more official weigh until Christmas. After my rocky start to last week I managed to pull things back completely and lost 1.5lbs this week. I was on top form, tracked every mouthful and planned every meal. I was on the top of my game.

Chicken Leek & Cider Pie



I am going to preface this recipe by saying it divided opinion in my home. My boyfriend was not a fan at all and I really like it. There were a few tweaks I would make if I were making it again (which I am including in the below) but I thought the flavour was really good. It was really easy to make and who doesn't love a good pie.

Christmas Challenge: Weigh In 12



We're entering the final stretch, only 2 more weigh ins until Christmas so its time to really make it count! I had my work Christmas part this week, and in addition I had a couple of unplanned events hit me this week and I was up half a pound. I also used up all of my new weeklies yesterday in my hungover state yesterday so I am starting out this week a little behind. I did manage to drag myself to the supermarket yesterday, in part to buy pizza, garlic bread and a donut to feed my hangover, but it means the kitchen is stocked. I wasn't quite with it enough to make soup for the week in work but I did manage a trip to Dunnes today without giving into my craving for a massive chicken fillet roll and have enough food to keep me going and on plan.

We're into the home straight now! December is here and there is only 3 more weigh in's left until Christmas Day hits! I am happily down half a pound this week. With 3 weigh ins left I do not think I am going to achieve my target of getting back to my goal weight by Christmas Day, however I am not giving up. I have 3 weeks to get as close as possible.

Christmas Challenge: Weigh In 9



Sorry for the late update but the flu hit this week and absolutely knocked me for six. I even had to miss a day of work which was not fun! So have been a bit behind in general this week. Also I can't believe we are at week 9 already, exactly 5 weeks to Christmas! I was down 1.5lbs this week which brings me up to exactly 9lbs in 9 weeks, right on track. 5 weeks and 5 pounds to get back to goal.

Unfortunately being sick has meant this week my routine has gone out the window and I am  not very optimistic about a good result on Sunday. Not going to make excuses, I was organised this week but I felt sorry for myself and gave into my cravings more often than I should have.  In my defense I haven't totally lost the run of myself, and most of my meals have been on track, I've just had the odd bad meal and one too many treats. I also haven't tracked so would be most likely well over my propoints. I am owning it and going to pull it back tomorrow and see if I can do any damage control!

Keeping it short this week, have a bit of a surprise coming tomorrow, but will reveal more then!

Christmas Challenge: Weigh In 8




It actually feels like only yesterday I was writing last weeks blog post, but its been a crazy week! As suspected I gained a little this week...1.5lbs to  be exact. I was expecting it so I'm not disappointed but I'm finding it hard to focus this week to make sure it comes back down. I am trying not to dwell on it and just get my head down and back in the game and I am home for a good result this week. The weeks are flying by and there are now only 7 weigh ins left until Christmas! I have no idea if I can make it back to goal but I am more focused than ever!

Christmas Challenge: Weigh In 7



I've had a bit of a meh week, the weather has well and truly turned and the winter blues are setting in. I  am not a fan of winter. I hate being cold, I never seem to find a happy medium with winter clothing. I either over dress and end up overheating, or I don't wear enough and am miserable and cold. It may seem a little off the point, but I find it really hard to stay on plan at times like this. I am absolutely an emotional eater, and so when I feel down I want to feed my emotions with 'nice' food. I try to recognise it and readjust my expectations of what constitutes 'nice' food. Nice food is anything that tastes good, I eat nice food all the time, in fact when I am 100% on track my food can be nicer as I am a little more experimental with my food.

Christmas Challenge: Weigh In 6




Another week, another 2 pounds! I am pretty happy with the way things are going, now only 5lbs above goal and 8 weeks to go. Heading into November is when things start to get a little bit more difficult. The social season begins to rear its ugly head which means a little more discipline is needed than usual. The key to this is the planning. Over the next few weeks I will be creating my own calendar of events. Planning for when I need to use my weeklies and when I need to be extra disciplined. In the past I have only really done this for December but I am going to start a little early this time.

Where are the weeks going, we are 5 weeks in already and I have no idea how it happened. I have had a couple of bad weigh ins the past few weeks but I never gave up and this week I was down a pound and a half. So we are down to 9 weeks to go and I have 7lbs to reach my goal. Its not going to be easy with the Christmas season getting closer and closer, but I know I can do it. If I start with the excuses now then I will never get there.

Christmas Challenge: Weigh In 4



I had the serious feat this morning before getting on the scale, its the usual feeling after a weekend away that I may have ruined all my hard work over the week. So I was pretty please to see no movement on the scales. I know its not ideal and the weeks are ticking on, but my goal was 1lb a week to Christmas and after 4 weeks I am still 5.5lbs down.

After a weekend in Leeds visiting my best friend I couldn't have asked for a better result. I stayed on my game all of last week until I got to the airport and while I was there I had my treats and moved on. Back on track this morning and ready to face another week! I am determined to see another loss this week.

Galway Bay Half Marathon



My first half marathon has been and gone, and yes I say first because I know it won't be my last. Myself and my friends, Emma & Aily, headed down to Galway on Friday evening in the most torrential rain.We left Dublin at 4:30 and didn't make it down to Galway until after 8. We kept the mood high in the car and tried to chat about anything and everything other than the race (which is fairly easy when 3 friends get together for the first time in ages luckily).

Christmas Challenge: Weigh In 3




Weighed in a day late this week because yesterday morning I was still in Galway recovering from my first half marathon (full post on this tomorrow). I wasn't expecting a loss this week, in fact I was expecting a gain. Anytime I have weighed in after completing a race I have always been up. I also did take Saturday and Sunday completely off tracking. So it was no surprise to see that I was up 2lbs today. I am counting this a just a little bump in the road. I have lost 5.5lbs in the past 3 weeks which is way ahead of my 1lb a week goal.

Christmas Challenge: Weigh In 2



Another great week under my belt, my tracking app must not know whats hit it. I have 14 fully tracked days under my belt which if I am being honest is probably the most consecutive full tracked days in about 2 years. It is most definitely paying off, more than I imagined. I was shocked to find I was down a further 3 lbs this week. I had not expected 2 huge losses in a row. I am only 2 weeks into my challenge and already over halfway to my goal. Now I am sure I gained a lot of the extra weight in a very short period of time which may explain why it has come off so quickly and I really do not expect it to continue.

10 Days to Galway Bay!



I actually cannot believe how fast the past few months have gone by and my first half marathon is almost upon me! I am feeling all sorts of things but mostly a hefty dose of nerves mixed with excitement. I feel prepared, my training has not been as rigorous as it could have been but I have done all I can. I've officially started my taper which means I only have a few shorter runs to go. I have been keeping up my gym routine twice a week but next week I am going to give it a miss. My runs have suffered a couple of times due to my aching muscles and I just don't want to take the risk.

Christmas Challenge: Weigh In 1


The results are in and after my first week 100% on track in a long time I am down 4.5lbs. Which to be honest I was not expecting and could not be happier about. I have not lost this much weight in a single week in a long time and it just goes to show how out of control I had gotten over the past few months. It wasn't a particularly difficult week, I ate out once and got a takeaway, I ate chocolate every day and didn't feel deprived at any point. Something that I realised that over the past year and a half that I had forgotten how great the program actually is. I have slowly slipped away and was following my own program which was working until this summer hit, but then I lost focus. It may be a bit early to say but I am really hoping I have found my focus now and can get myself back to a healthier me. 


I have had some great food this week, when I ate out I made the healthy choice and really enjoyed it. I chose to go back to propoints, I find that I bend the rules a little too much on the filling and healthy program. It works so well for so many people, but I like the feeling of being really full and propoints lets me do that. I can still have loads to eat on 26pp per day and while a lot of the foods I eat actually do count as filling and healthy foods I really like the flexability of being able to have some smoked salmon, or a bit of cheese and still have my weeklies in tact for those moments when only chocolate will do. 


Last week when I realised how much weight I put on, I was a little down about it and I said it to my boyfriend. He looked at me and said "You've done this before and you can do it again", at the time it wasn't what I wanted to hear. I wanted him to tell me the scales must be wrong and I hadn't gained any weight and was still gorgeous, so his words unintentionally brought me down again. But the more I have thought about these words, I realise it was just what I needed to hear. He is right and lying to me wouldn't have helped. I know I can do this, and throughout my life this may happen again and I need to remember that I can do this. It is not a failure to fall off the wagon, but it is a failure not to jump back on when you realise.

Confessions of a Gold Member




Being a gold member is not easy. There is no magic button you press when you get your gold card that means all your food and weight loss issues have disappeared forever. The work doesn't end with that lovely little card in your wallet. It can be really hard to actually accept that you will have to be careful around food for the rest of your life, that you will never get to just eat what you want when you want like you perceive all those 'normal' people you know do. That thought has crept into my mind so many times over the past year and a half, usually a fairly fleeting moment while I am stuffing chocolate or cake into my face. The thought passes usually fairly quickly, and doesn't come back for at least a few weeks.

6 Months Ago...

I hope I can....

Back in February I made a decision to get back into running. I signed up to a training program to finally achieve one of my most elusive goals....the sub 60 minute 10k. Somewhere around that same time I said to someone, maybe I'll do a half marathon. Now I have said things like this before and in pretty similar circumstances, usually right after getting out and doing one or two consecutive runs in the hopes of making it a regular thing. When I uttered those words, I meant them at the time but instantly regretted saying it out loud and was sure it would never happen. A couple of days passed, and it was different, I kept thinking about it. Not only did I keep thinking about it, I actually googled half marathons in Ireland to actually see if there was one I would like to do.

Indulgent Seafood Pasta




I stayed with my mum last Sunday while my dad was away, and since she is following slimming world we needed something that worked for both plans, but felt like a treat for a girls night in. Lucky for me my mother was footing the bill and came home with the most delicious array of seafood imaginable. There was salmon, monkfish, crayfish, mussels and a scallop. I think pasta, seafood, garlic and cream go perfectly together, but it usually makes a healthy seafood dish into a calorie laden guilt fest! So we tweaked it a little and made it fit with our healthy lifestyle.

Checking In






I have one hell of a couple of weeks. I am now officially OLD....ok well maybe not old but I have hit my 30's. And despite my initial freak outs, I think I've taken it in my stride. On top of that I had a fantastic birthday spent with my family and friends. There has been a little bit too much celebrating going on and its time to reign it in A LOT! Its not over yet, I have a special bank holiday weekend coming up, heading for a romantic night down in The Cliff House in Waterford. This was myself and Conor's birthday present to ourselves, and it will be 2 days of delicious food and I am going to enjoy every mouthful. I have not gotten back on track fully since my birthday and I am up a couple of pounts, so with only 3 days to go before Cliff House what do I do?

Courgetti/Zoodles!!

So courgetti (or zoodles as the americans know them as)! Just over a year ago I gave this my first go with a bit of courgette tagliatelle - it was good but I knew then that I needed either a julienne peeler or a spiralizer to make it really compare to real pasta. Over the past year I have looked at these on Amazon more times than I can remember but for some reason never actually ordered one. And last week in Dunnes there was the julienne peeler I have been double checking for in every shop for the past year!

Its been a while...



I have been a little neglectful of my blog of late, if I am being honest I have been a bit neglectful of my healthy of late too. I was telling myself that I had just been too busy to blog, but the reality was that I was feeling too guilty! Guilt, it is the most unproductive feeling in the world. It is so tied up with negativity that all it does is send you down a spiral. You try to make up for the wrong you have done, but when you aren't perfect the guilt kicks in again and you end up taking 2 massive steps backwards.

Mini Marathon 2014!



Yesterday was the big day, my 7th Mini Marathon! I got a pink number this year which put me in with the fast joggers and I was hoping that would mean I would get a good start. The weather looked perfect, it was overcast and dry and I was feeling good when I got up. I was awake far earlier than I needed to be and had a really relaxing morning chilling out and trying not to over think the run!

In It For The Long Run!



I have had a bit of an up and down week last week. I was a bit all over the place with my schedule and found myself really struggling to find motivation. I have been really busy with work the past couple of weeks and I am so tired by the time I get home. I find myself starting to make excuses and planning on cutting my runs short. I got home from work late last wednesday and for the 2nd week in a row decided not to get up for my Thursday morning run. While the week before I went out that evening this week I worked even later on Thursday and didn't make it out until Friday morning. I was tempted to just skip it but I am glad I got out. Friday's run was not my best, but I needed it.  Saturday was a planned rest day and I feel looking back that skipping Thursday's could be just the start of me giving up.

2 Week Countdown is On - Panic Stations



I am constantly surprised by how fast time is going by, and I was shocked to see a post on facebook today saying there was only 2 weeks left until the mini marathon....I was sure I had 3 weeks left. Despite the fact I only have 2 weeks to go I am feeling good. I have stuck to my training plan, and I have not missed a single training session (some have been rescheduled but none missed). This is the most consistently I have ever trained and no matter what time I get on the day I am proud of how far I have come.

Chicken & Bacon Pasta


It's dishes like these that make me really love filling and healthy! No weighing or calculating and a really delicious, comfort food dish that will most definitely keep you going. Despite the fact that pasta is free on F&H and SS, I like to try and keep an eye on the breakdown of my meals to ensure I am not overloading on carbs and am getting enough protein and some healthy fats and I have added weights to the recipe mostly for the purposes of propointing the recipe for anyone counting. Everything can be adjusted to suit taste/appetite.

So I Took a Week Off....



I have been a bit absent for the past week, mainly trying to hide the fact I just took an entire week off. I was planning on taking easter weekend off anyway, we had dinner at my parents and dinner at my boyfriends parents house as well as brunch out and I just didn't want to stress so I made a conscious decision not to track or count. One weekend, not so bad right.

Pay It Forward!




It can be so easy to focus on the negatives but life is so much better if you pick out those little things that make you smile and keep you going. Encouragement and motivation comes from all different places as do comments designed to bring you down. Ignore the naysayers - they want you to fail and pick out those little gems of motivation that get you through the tough times. I am really lucky that my family and friends are all incredibly positive but I hear awful stories from people on instagram, boards and facebook about people who just hear negativity all the time. If you have those people in your life BLOCK THEM OUT! Take your motivation from those who are in it with you! The internet is filled with advice, help and encouragement!

Lamb Moussaka



One of the people I follow on twitter posted a picture of a moussaka they made the other day and it made me absolutely crave one! I love moussaka and it would be a regular dinner when we were kids, usually the day after having roast lamb. Lamb has a bit of a 'fatty' rep with weight watchers and you can use lean beef mince for this recipe however the lamb mince I found really is not much higher in propoints. I found this pack in Supervalue and for the full 454g pack there is 23pp. The recipe serves 6 with decent sized portions and is only 8pp per serving.

Let's Go April




We are well into April now and things are going better and better for me! I have been putting a bit more focus back into my food while not slacking at all on the running. I have decided to up my daily propoints to 29 per day. I worked out the calories I was eating per day and for all the running I was doing they were very low, I was trying to compensate by eating my activity points but I would be eating things without tracking properly and not using them as wisely as possible. Also by upping my propoints I can fit a little more healthy fat and protein into my diet while keeping a decent amount of carbs to fuel my running. What I am trying to cut out again is the processed foods. I need to go back to tracking my weekends properly as I think this is where I really fall down.

March Progress!



Can you believe its April already? Where has the year gone! March absolutely flew by but I am really happy with my progress so far. I am yet to miss a scheduled training run which I am so proud of. This is the longest consistent training I have done and I am feeling like I can achieve my running goals this year. In another couple of weeks I will be ready to sign up for my very first half marathon in October. I want to get at least one 14k run under my belt before I actually sign up but I am quietly confident. If anyone has ever done the Galway Bay Half Marathon I would love to hear how you found it.

Ginger Beef Stir Fry





Stir fries are one of those go to easy meals that everyone makes. Its very easy to find your method and just stick with that and I had fallen trap to that. While the protein in my stir fries does tend to vary, I generally got with this method  of egg fried rice. I have to say I would tend to make this at least once every 3 weeks as its easy and cheap, but it does get a bit boring. So I decided to try something new this week.

Spiced Cod with Roasted Vegetables and Garlic Jalapeno Mayo



I love cod, its so versatile and amazing value that it makes a great dinner staple. Its also so low in propoints so its fab for a day when you may have over indulged or just fancied a slightly larger breakfast and lunch and smaller dinner. 

I got some amazing round courgettes in lidl at the weekend which I really wanted to try, so roast veg was the obvious choice here. (I think I'll get some next week and try stuff them as a side dish). We also got a little pack of very hot fresh chillis which included a fresh jalapeno, so I wanted to do something with these too!

Week 3 Training - Done!!





When I decided to start my early morning runs, I honestly never thought I'd be telling you over 3 weeks later I am still up every Tuesday and Thursday at 5:45am and I am loving it. The first 5 minutes out of bed is absolute killer but it is more than worth it!

Week 2 Training!





I'm finished week 2 of my sub 60 minute 10k training program and my motivation is at an all time high! My midweek early mornings are definitely proving more successful than trying to get myself out after work. I manage to get up on my first alarm at 5am (something I can never do any other day) and am out and back before I do it. Getting the pacing right can be a be a bit tough that early but I'm getting there and getting the runs done. One thing I have learned this week is jogging hungover is really hard. It was my dad's birthday on Friday night (Happy Birthday Dad) and we did consume a fair amount of wine with dinner. I thought it would be best to just get the run out of the way as soon as I got up, but boy was I wrong. I am just lucky that it was only a 3.2k because I really struggled with it. Next time I'm hungover I'll be moving to an evening run.

Chipotle Chicken with Cous Cous




Last week I made Chipotle Pork chops which saw Chipotle paste on my shopping list. I'd only ever really had chipotle mayonnaise which is lovely but didn't really prepare me for how good a flavour chipotle actually is. The chipotle pork chops were amazing and I had some paste leftover this week which needed using. I spent the whole day thinking of how to use it and came up with this simple but tasty recipe. The recipe is simple start/ filling and healthy friendly except for the chipotle paste which is 1pp per tablespoon which is all I used, so I chose to count the recipe as free on SS/F&H but to be extra safe you could take 1pp from your weeklies.

Conquering My Fear!



I have been doing the Mini Marathon almost every year with my good friend Clare since 2005. We have only missed 2 years, one when I was out of the country and the other when it was only 2 weeks after my friend had her baby. We haven't always run it, but we do always complete the whole 10k! Its our tradition and its around that time that we'd have to sign up. Going back a couple of months I had big running plans for 2014 but then the Movember 10k happened. I had a panic attack at the 3km point and ever since then I have been terrified to go out running. I'm not even sure why it got to me so bad, I have had panic/anxiety attacks in the past but they have never got in the way of my day to day life. I have tried to put it to the back of my mind and forget about it, but in doing so I also pushed all thoughts of running away. A few friends of mine are signing up for the Great Ireland Run in April (which I did last year) and I was asked to sign up. Instead of going for it, or even explaining why I couldn't, I just ignored it and pushed it all to the back of my mind.

The past few weeks its been pushing back, and I think its the Mini Marathon that is pushing back! Even with that its taken me a few weeks to do something about it but I finally have. I signed up for a sub 60minute 10k training program with Run Keeper. Doing 10k in less than 60 minutes has been a goal of mine for years that I have never quite reached and I really want to hit this milestone. The program is 16 weeks long so it finishes a week or 2 after the mini marathon. I am ok with that as the crowds at the mini marathon do not make it ideal for getting a decent time. What I do want to get out of this is to get back into my running stride and completely get over my fear. Once I can do that I can think about actual achieving my goal.

Today was day one of the 16 weeks, and I decided I was going to try running before work on the weekdays. I know that when I get home in the evening I really like my time. I like to take time cooking something tasty and having a bit of chill out time to blog or read or watch TV. To throw a run into that mix leaves you with very little relaxation time. I mean its possible to do, but not ideal. Also if I woke up and decided not to go out, I still had the evening to redeem myself. So with that in mind I had an early night last night, left my jogging gear ready to go and set my alarm for 5:50am....and I actually got up!





It was cold and dark but out I went ready to get my 3.2k over with. It was a small start but I was glad of that. The 10k programs assume a certain level of fitness and there was a certain fear that I wasn't even going to be able for 3.2k. To my absolute relief I finished my 3.2k and while I didn't find it easy I have the confidence that I will be ok with Thursdays 4.8k! It is also amazing to get home from work knowing I can just relax and cook a delicious cottage pie for dinner. I feel productive and good and am almost looking forward to getting up early on Thursday and doing this again. I'm not putting any pressure on myself, just taking it one run at a time and see how things go until June!

Asian Style Haddock



I bought some frozen haddock fillets a few weeks ago and they are a little dull just oven baked so I wanted to do something to spice them up a bit. I also needed something quick and easy for the night before heading to Edinburgh. I have a terrible habit of leaving all my preparations to the last minute and end up panicking to get ready in time, so this was a great quick meal. Its filling and healthy friendly and only 4pp per portion if you are counting. I served this with some M&S fine egg noodles for an extra 2pp per portion but you could have this with some brown rice if you want it to be all filling & healthy friendly or any other side dish of your choice. I used frozen haddock but you could use fresh or any other firm white fish like cod just adjust the cooking times.
