It was a fabulous meal, but the recipe is not mine, its my mothers, and its not a recipe as such as a dish she threw together. I have to say it was really good so we talked through how she made it so I can piece together the recipe for the blog. Its all free on Filling & Healthy which is always a plus!

My 2nd Half Marathon!
Yesterday I completed my 2nd half marathon! And despite the fact that I am so incredibly stiff and sore, I am already planning for my next one. That's the thing about races, they are addictive. I mean I know I always feel great after my regular morning & weekend runs, but its hard to stay motivated without a race to work towards and the feeling you get crossing the finish line!

One Year Later...
Yesterday was my goalaversary....yes I know that is a made up word but I feel the event needs a word! I have been at goal for a full year now. I still remember how it felt to get up on that scales and see my weight. I knew at that moment I was there. I'm not sure at that point I understand that the real challenge was just beginning! Don't get me wrong, losing the 52.5lbs was tough, especially the last half stone. It required dedicated and determination and there were times I thought I wasn't going to make it. However maintenance is whole different ball game. You feel like you should be able to just "eat normally" again but the fear of going back is always there!!

Pesto Style Dressing!

I bought a bunch of basil the other night and I was planing on just tearing it into some roasted veg, but for some reason I got thinking about my FAVOURITE bagel for itsa bagel....the californian. The sauce in it is basil mayo and it is so delicious! I also needed some sort of sauce to go with the haddock so I decided I would try and recreate the basil 'mayo' but make it Simple Start friendly. Because I added some garlic (which I love) and used some quark cheese, the result was like a creamy pesto dressing.

Simple Start Food Diary!!
I've been having such a great time on Simple Start and judging by my clothes I think I'm on track for another loss this week which is good. You never know until you get on the scales, but even if I don't see it there I'm still feeling good.
So I've decided to share a typical days worth of food while I've been following the plan! This is what I have eaten today - and you can see how much food I've been having!

I had been getting a bit bored with porridge so I decided to mix it up and bit and bought some shredded wheat. I forgot how much I love the stuff. I know a lot of people think it tastes like cardboard, but I genuinely love it. When I'm pointing I am always conscious of how much milk I use and it's nice on SS not to have to worry about. I have my shredded wheat with a banana, its really the only fruit I can stomach in cereal!

A Lovely Day for a Walk!
Can you believe how glorious the weather is for the end of September! We have been spoiled rotten by this weather and I do not know how I am going to manage it once the winter really hits. I did not handle the brief few days of cold and rain well!
Back to the now, the wonderful Mary (my amazing ex - weight watcher leader) picked a perfect saturday to undertake the Bray to Greystones cliff walk. I grew up in Cabinteely and have never ever done this walk so I decided no matter what I was going to make this walk. I was also dog sitting for my parents dogs for the weekend so perfect opportunity to get them out for a walk!

Change for Life!
In this weeks meeting our lovely new leader (still missing Mary terribly though) focused on protein which I felt was quite relevant to what I have been focusing on these past few weeks. I feel that I am finally in a position where I can really experiment with my diet a little bit to find the best way to ensure this is a permanent change. I know I have been harping on and on about it and I apologise for this, but I guess I am really trying to figure things out. Weight watchers has given me such fantastic tools and now I just want to expand on that as much as possible.

6 Week Challenge - Week 2 Update
Well as you can see I am starting my third week well prepared. I stuck to last weeks plan to the letter and I am happy to report I was down
a further half pound this evening. I am already half a pound above my 1lb a week goal. I did end up having a little bit of cous cous at book club and at my parents house and while I can't for sure say its down the cous cous, I have felt much more bloated since eating it. However I have still stayed away from the bread and pasta and most things processed. My energy levels are still up and my skin is continuing to become clearer and all around I am feeling good.

Nothing Tastes as Good as Being Thin Feels.........
We have all heard the phrase 'nothing tastes as good as being thing feels', and I know I have used this phrase many a time for motivation, but I am not sure this reflects my feelings on this anymore. I've spent a lot of time this week thinking about the reasons why I embarked on my own weight loss journey. Of course there are a lot of different reasons for this, but vanity played a huge part in this. Now I'm not saying there is anything wrong as using vanity as motivation, it is important to be able to feel comfortable in your own skin and feel good about who you are. However I'm beginning to think that I have put a bit too much of an emphasis on that. I have managed to maintain my weight but I I have slipped back into bad habits over time and that is why I have decided I need to rethink my motivation and look back to my longterm goals.

Hairy Dieters Do It Again!! **Smart Point & Flex Updated**
Everyone knows how big a fan I was of the Hairy Dieters first cook book. It is easily my most used cook book and it has never failed to disappoint, whether I am just cooking for me or entertaining friends. I was so excited when I found out they had a new book coming out and I ordered it as soon as I could. And here it is, Hairy Dieters: Eat For Life. I only got it on Tuesday so am yet to try any of the recipes, but after analysing all the recipes (working out the propoints), I do believe this one is even better than the last. For anyone trying to lose weight, be it on weight watchers or otherwise, I seriously cannot recommend these books enough! This one focuses on the importance of making the life time changes and sticking with them, which is hugely relevant to me and I'm sure many others now!Since my last post on these guys is far and above my most popular post, I have trawled through the new book and calculated the propoints for all the recipes.

6 Week Challenge
I feel like the "diet switch" has been constantly changing over the past few months. We all know the feeling, wake up in the morning and the switch is firmly turned on - by the weekend it is firmly turned off, and in the few days in between has going a little bit crazy. I have been managing to maintain within my 5lbs, but I am yet to go even half a pound under my goal. This is and always has been to me a life change rather than a diet, but I have found myself over the past few months over indulging and spending the rest of the time trying to make up for it. I need to remind myself of where I am and how I got here. Only then will I really figure out how to stay here!

Ice Ice Baby

The weather does seem to be fading slowly into August so I may have missed the boat a bit with this post. Despite the sun having disappeared, it is still very warm and very muggy and it has taken until now for me to discover just how refreshing an Iced Coffee is. The fact that my new job is 2 doors away from a Starbucks has meant I have spent an unnatural amount of money on coffee. Before I do any serious damage I decide to work out the points in all the lovely iced treats. I've decided to post the points for the best value ones available, and anything that includes whipped cream is really not worth it (a tall skinny caramel frappacino is 8pp with whipped cream and only 3pp without). Nutritional info is on all the websites, but this just gives you a taste of whats available!

The Lazy Days of Summer
Summer is here and it looks like it may be here to stay. This is the longest continuous heatwave I can remember for years and it is glorious! As much as I refuse to complain about this, it can make it much more difficult to stay on track. Ice creams and beer gardens have a definite pull that can be hard to resist. There are a few things that are also equally good this time of year that will help you save your weeklies for a few ice cold beers!

Picnic time!!
June bank holiday weekend is upon us and I was seriously banking on some nice weather for a picnic in the park - but of course Irish weather has let me down. Instead I decided to make the picnic salads and have an indoor picnic which turned out just as nice. I only made a few salads as it was just a few of us but I'm sharing recipes for a few more you can make for a group picnic. The recipes can serve anywhere from 4-6 people, depending on how many you make, how hungry people are so I'm listing the propoints for the entire recipe and you can work it out depending on the amount of people eating.

Tuesday's Food Diary
This is day one of my online week of tracking! I have tried to take pictures of all my meals and snacks to keep it a bit interesting.
My day started with my usual weekday breakfast - 30g porridge oats made up with water and then a muller light coconut greek yoghurt stirred through. I try to alternate the flavour of yoghurt I use but coconut is def my favourite and just what I needed to cheer me up in work this morning.

Mozzarella Stuffed Meatballs with Roasted Pepper Sauce
This doesn't sound like a weight watcher friendly meal, and it doesn't taste like one either. This is absolutely indulgent and delicious (if I do say so myself, and unbelievably filling. For anyone that likes italian give this ago. The recipe serves 4, and you can easily freeze half of these before cooking, or use half the mixture to make burgers for another night (this is what I did, 2 different meals in the same week done easily - all you need is to add points for the bun/pasta/sauce). Anyway this is not too difficult but it is a little time consuming. I made it mid week but we ended up eating quite late because of it, so just keep that in mind if you give it a go.
Meatballs:
Serves - 4
Propoints per serving - 4pp (3pp if no mozzarella is used)
Filling & Healthy - 1pp
Ingredients:
500g extra lean mince (less than 5% fat)
1 onion
4 cloves garlic
0.5tbsp tomato puree or tomato ketchup
A good splash of worcester sauce
1 tsp dried oregano
0.5 tbsp paprika
salt and pepper
80g - 100g light mozzarella drained and chopped into small pieces
Using a food processer , mince the onions and the garlic until you end up with a puree. You can add a few drops of water if your find the mixture sticking a little.
Add this to the mince with the tomato puree, paprika, oregano and worcester sauce and mix well with your hands. Season well.
At this point you want to add some egg white to bind this but you don't want to make the mixture too wet. Add a little at a time and the mixture will hold its shape well but is not sticky.
The mixture should make 16 meatballs. Taking 1/12th of the mixture, flatten it into a disc in your hand and place a small piece of mozzarella in the centre. Close the meatball around the cheese and roll in your hands until a smooth ball is formed. You want to make sure there are no cracks left in the ball and you have not put too much cheese in otherwise they will burst when cooking. Repeat with the rest of the meat. Leave these to sit in the fridge for 10/15 minutes while you make your sauce (recipe for the sauce below).
| Preheat your oven to 200C/180C fan. Heat a good non stick pan over a medium high heat and mist with spray oil. Brown the meatballs all over, be careful not too move them around too much as you run the risk of breaking them up but you want to ensure that all sides are browned. This should take about 5 minutes. I usually do this in batches as it is easier to control this way. |
Place the meatballs in an overproof dish and cover with your sauce. Place in the preheated oven for 18 minutes. At this point they should be cooked through but you may want to double check by cutting into one before serving.
While they are in the over you can cook whatever accompaniment you choose to go with these, I used 50g (dry weight) spaghetti per person for an extra 5pp. Serve 4 meatballs per person with 1/4 of the sauce on top of the pasta and enjoy. You can top with 5g grated parmesan for an extra propoint but as there is cheese in the meatball its not necessary.
Roasted Pepper Sauce
Serves 4
Propoints per serving: 0
Ingredients:
2 peppers (red and yellow work best)
1 onion
3 cloves garlic
1 tin chopped tomatoes
1 tbsp tomato puree
1 tsp oregano
1 tsp sweetener
salt and pepper
Preheat the oven to the highest temp and place the peppers on an oven tray. Roast until the skin is blackened turning occasionally to ensure even cooking. When these are done place in a ziploc bag and leave to cool. The skin should then come off easily. Peel and deseed and blend to a smooth puree in a food processer. Leave to one side.
I like all of my sauces smooth rather than chunky, but to go with the meatballs this is especially important. I find it easier to do this before cooking and as with the meatball recipe I mince my onions and garlic before cooking. You can however choose to just chop these and use a stick blender to puree the sauce after. The rest of the method does not change though.
Mist a non stick saucepan with spray oil and heat over a low heat. Add the minced onions and garlic and cook for 3-4 minutes stirring constantly. If they start to stick add a little water. Add the chopped tomatoes, tomato puree and the roasted pepper puree and still well. Add the oregano, sweetener and season well to taste. Leave simmering over a low heat for 10 minutes and ready to use.
This sauce goes really well just with pasta/rice/couscous for a vegetarian dinner. Can be poured over chicken breasts or pork chops before baking and served with a baked potato. Its really versatile, easy and yummy!

Saucy Saucy
I love fish. All types (except oysters) and lucky for me its incredibly good for you. Shellfish and white fish are unbelievably low in pro points and the oily fish like salmon and mackerel, while higher in pro points, are the best types of fat you need in your diet. So all in all a win win.
I have been seeing more and more of The Saucy Fish Co in shops and have tried a few of their products and they are great. What you get is good quality pieces of fish

Chicken & Spinach Pasta
Was feeling quite lazy tonight after a day of housework, grocery shopping and working out and I didn't really want to cook much. Knew I had spinach that needed using and I had just bought some chicken breasts so this was the easiest thing to keep me away from the junk. It is a really quick, easy and satisfying dinner.

Mediterranean Beef Burgers
This is another recipe I got from the Hairy Dieters book - which I have to say is still yet to disappoint. This is a perfect recipe for a saturday night dinner, either for a family or when you have people over for a casual dinner and a few drinks. The burgers are 11pp on their own, so while its fine if all the sides you have are 0, I personally think they are a bit high for a midweek dinner. On a Saturday I generally only have 2 meals - brunch and dinner and have a few more disposable points for a bit of an indulgent dinner. The recipe calls for grated courgette to be added to the mince, which I was skeptical of. But at this stage I really should know not to question the hairy dieters because it made the mince go further for bigger burgers, and while you couldn't taste it exactly, it definitely kept the burgers moist. I also got an airfryer for christmas, so I paired my burger with 250g of chips per person and a bit of ketchup and mayo for an extra 6pp.

First Weigh In of 2013!!
I decided that I just couldn't wait until next week to get weighed, and because my usual class doesn't go back until Tuesday I weighed in today. So I went to a lunch time one near where I work feeling positive, I honestly was prepared for the worst and would have accepted anything the scales wanted to tell me. To my delight there was no damage done, a nice STS on a week where to be honest nothing would surprise me. It's given me a huge push to get myself back on track in a big way.
I have 9lbs left to goal and 5.5lbs to my 4th stone. I am considering setting my official WW goal weight at the 4 stone mark and then working on the last 3.5 on my own and also as a goal buffer as well. I
