Ginger Beef Stir Fry





Stir fries are one of those go to easy meals that everyone makes. Its very easy to find your method and just stick with that and I had fallen trap to that. While the protein in my stir fries does tend to vary, I generally got with this method  of egg fried rice. I have to say I would tend to make this at least once every 3 weeks as its easy and cheap, but it does get a bit boring. So I decided to try something new this week.




I got some beef stir fry strips in tesco at the weekend which are lean sirloin cut into stir fry strips. According to the nutritional info half the 340g pack works out as 5pp which is perfect for a stir fry. It can sometimes be hard to work out propoints for generic meats as you are not sure how lean they may be, so I always go with whats on the pack where available. I paired my stir fry with some brown rice here, but I have had it with fine noodles and it goes well with both. You do need to use a really good quality dark soy sauce, if its not thick and almost syrupy then it won't work as well, one from an Asian Food Shop is usually best.

Ingredients:
1 pack Tesco Sirloin Stir Fry Strips (or 340g sirloin steak cut into strips)
2 tsp cornflour
2 tbsp dark soy sauce
1 tbsp rice vinegar
1-2 inch root ginger, peeled & grated
3 large garlic cloves crushed
1 medium carrot
1/2 medium courgette
1 red pepper
1 medium onion
100g fine beans
75g broccoli florets
1 red chilli
1 tsp fish sauce
1 tbsp sesame oil

Coat your beef strips in corn flour and then mix through the soy sauce, rice vinegar, ginger and 1 of the crushed garlic cloves. Cover and leave to one side to marinate.

Julienne your carrots, courgette and red pepper, slice the onions into rings, and trim the green beans. Cut the broccoli into bitesized florets and slice the chilli thinly (you can remove the seeds if you like). Heat half the sesame oil in a wok until very hot and add the carrot and onion. Cook for 2 minutes stirring constantly then add the peppers and beans cooking for 2 minutes further. Next add the courgette, broccoli, chilli, remaining garlic and fish sauce and stir fry for 2-4 minutes until the veg are starting to soften.

Remove the veg from the pan and set to one side and heat the remainder of the sesame oil. Add the beef and marindate and cook for 3-4 minutes stirring constantly before adding the vegetables back into the pan. When everything is heated through, taste for seasoning and serve immediately.
