Cumin Spiced Butternut Squash Soup

I have been meaning to make soup since the weather turned and my mum bought me a lovely hand blender so I had no excuse other than laziness not too. Well I finally got around to it yesterday and made a huge pot of soup for lunches this week. Really very tasty and warming!! Recipe came from the Complete Kitchen - my favourite Weight Watcher Cookbook!!

Ingredients:
1kg Butternut Squash - peeled and cubed
2 onions chopped
1tbsp ground cumin
1tsp ground cinnamon
1/4 tsp chilli flakes
850ml vegetable stock (2 cubes)
Juice of half a lemon


Put the onions in a large lidded pan with 100ml of the stock and cook with the lid on for 5 mins until softened.
Add the cumin, chilli flakes and cinnamon and cook for 1 more minute.
Add the butternut squash and the rest of the stock and cook for 15 minutes or until tender.
Blend with a hand blender or food processor and stir in the lemon juice.

Super easy and tasty - the chilli flakes do add a bit of a kick (surprising as there are so little in there) so if you don't like chilli maybe go easy or leave them out. But all in all a delicious winter soup!
