Saturday Breakfast!!

We weren't in the mood for bread this morning and my OH is not a fan of omelettes so I decided to try something a little different and make homemade potato cakes and poached eggs. Only 5pp and it hits the spot for something a little different.




Serves: 3
Propoints per serving: 5
Ingredients:
300g potato peeled
2 scallions
2 tsp low fat spread
3 medium eggs
3 vine tomatoes halved

Boil the potatoes, be sure not to overcook them as you do not want them too mushy. While these are cooking finely chop the scallions soften them in 1tsp of the spread. When the potatoes are cooked mash them with the scallion and rest of the spread and season to taste. Shape into 3 patties and put in the fridge for at least an hour so they can cool and set.

When they are fully set, put the tomatoes under the grill cut side up, fill a pan with simmering water and heat a frying pan with low fat cooking spray. Fry the potato cakes but be sure not to move them around too much or will break apart - only turn them when they are golden on one side. While these are cooking poach your eggs to your liking. Serve a potato cake, egg and 2 tomato halves per person.

I only have big dinner plate so it looks really empty and not as apetising as it acually was,  but it was very filling and tasty. You could also serve this with some wilted spinach or some grilled mushrooms or both to bulk it out if you are extra hungry.
