Pasta is one of those easy, go to dinners you can throw together after a long day - and this a particularly quick and easy meal. You only need one pot for this which means clean up is a breeze as well which is always welcome mid week.
Perfect served with a simple mixed salad, this a no fuss meal for any night of the week.

Ingredients:
150g penne pasta
100g broccoli florets
150g smoked salmon
50g low fat creme fraiche
2 tbsp chopped dill
Juice of half a lemon
salt & black pepper
Cook the penne according to the packet instructions, adding the broccoli for the last 3 minutes of cooking.
Drain well, reserving some of the starchy pasta water, and put back in the pot. Chop the smoked salmon and mix with the pasta, broccoli. Stir through the creme fraiche, lemon juice and dill, adding some pasta water a little at a time. Season with a little salt and lots of black pepper and return to the heat for 2-3 minutes until everything is warmed through.
Serve sprinkled with a little dill and a wedge of lemon.
You can add some dried chilli flakes if you like a bit of spice, but this is delicious as is.
