We've been eating a lot of Asian inspired food lately and I'm really loving it. The freshness and delicate nature of the flavours all mixed together make such a lovely light but satisfying meal. Cod is such great value smartpoints wise but it can be very boring on its own, but pairing it with some ginger and chilli really complements the texture and flavour of the fish.
This was a really quick and easy mid week dinner and it comes in a 5 smartpoints per portion. We served it with some lightly stir fried veggies and some brown rice for an extra 6 smartpoints and it was a fantastic and filling meal.

Ingredients:
1 tbsp cornflour
200ml water
2 tbsp light soy sauce
15g fresh ginger
1tbsp caster sugar
1 red chilli
2 tsp fish sauce
4 tbsp white wine vinegar
250g skinless cod fillets
2 tbsp chopped coriander
Peel & grate the ginger, and thinly slice the chilli.
Dissolve 1 tsp of the cornflour in the soy sauce and set aside.
Put the ginger, chilli, sugar, fish sauce, vinegar and water in a small pan. Bring to the boil and rapidly bubble for 3-4 minutes. Stir in the soy mixture and simmer for 2-3 minutes until thickened.
Cut the cod into chunks and coat in the remaining cornflour. Heat a non stick pan and spray with oil.
Fry the cod fillets for around 5 minutes until golden, crispy & cooked through, turning once halfway through cooking.
Divide the cod between serving plates, pour over the sauce and topped with the chopped coriander.
