This is a great friday night quick but really tasty dinner. I love crab and I love pasta, whats not to like. So here goes.
Serves: 2

Smartpoints on No Count: 0 (if using brown spaghetti)
Propoints per serving: 10pp
125g spaghetti
110g crab meat
1 red chilli chopped finely
2 large cloves garlic chopped finely
zest and juice of half a lemon
handful of chopped flat leaf parsley
1 tbsp good quality olive oil
Put your spaghetti on to boil.
While that is cooking put your chilli, garlic and olive oil in a pan and turn on the heat. (i find the garlic doesn't burn if you put it in and heat with the oil.)
Cook for about 3-4 mins until the garlic and chilli is just soft. Add in the crab meat and lemon zest and juice and a good seasoning of salt and pepper. Cook for a further minute or until hot through and stir in the parsley.
When the pasta is cooked stir through the crab mixture with a small amount of water if necessary.
Serve immediately with a leafy green salad.
I have a couple of risotto recipes I will post later in the week. Have been cooking a lot of Italian food lately. Very easy and tasty.
