Caprese Chicken



I made this a few weeks ago when I was really in the mood for a comforting and indulgent meal. Low fat mozzarella is one of my favourite things to add to italian food as the lovely stringy texture makes it feel like it is really naughty full fat cheese but it is so low in smart points. 


I served this with some spaghetti but it would be equally as good with just a  big salad if you are looking for a low carb/low SmartPoint option. This can be thrown together in about 30 minutes, so its perfect for a midweek meal and I promise nobody will notice that this is a Weight Watcher friendly recipe.

Ingredients:
4 Chicken Breasts 
1 Ball of Low Fat Mozzarella
4 Slices of Prosciutto
Small Bunch of Basil
1 Tin of Chopped Tomatoes
1 Small Onion
2 Garlic Cloves
Low Calorie Spray Oil
Salt & Pepper


Preheat the oven to 180C. 

Slice the mozzarella a set to one side. Slice open the chicken breasts and season well. Lay one slice of prosciutto on half of each opened chicken breast and divide the mozzarella on top. Add a couple of basil leaves to each and fold back over. Heat a non stick pan misted with oil over a high heat. Fry the chicken breasts for a couple of minutes on each side until just golden on the outside and set to one side. 

Slice the onion and crush the garlic and add to the frying pan. Cook on a low heat for a few minutes until softened. You can add a splash of water or a little more spray oil if it starts to catch. Add the chopped tomatoes and bring to the boil. Reduce to a simmer and season to taste. Take off the heat and pour into an oven dish big enough for all 4 chicken breasts. Stir through the remaining basil leaves and nestle the chicken breasts into the sauce. 

Cook in the preheated oven for 15-20 minutes until the chicken is cooked through. Serve immediately.
